Quiche Muffins

Ingredients

  • 1 (16 oz.) carton cottage cheese
  • 3 egg whites
  • 5 eggs
  • 1/4 c. buttermilk
  • 1/4 c. all-purpose flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 2 c. grated sharp cheddar cheese
  • 2 green onions, chopped
  • 10 slices bacon, cooked and crumbled

Preparation

Step 1

Preheat oven to 400 degrees. Place cottage cheese in a food processor fitted with a steel blade and process until smooth. Transfer to a large bowl. Process egg whites in food processor until foamy. Add next 5 ingredients and process until smooth. Add next 5 ingredients and process until smoooth. Add egg mixture to cottage cheese. Stir in cheese, onions and bacon. Fill greased large muffin tins 2/3 full and bake 12-15 minutes or until edges are light brown.
