Sparkly Carrots
Use your favourite clear carbonated soda in this easy recipe. It adds a slightly sweet crispness to this side dish.

Ingredients
- 1 tbsp olive oil
- 2 shallonts, minced
- 2 cups baby carrots
- 1/2 cup gluten-free lime carbonated soda
- 1/4 tsp slat
- 1/8 tsp pepper
Preparation
Step 1
1. In large skillet, heat olive oil over medium heat. Add shallots; cook and stir until crisp-tender, about 2 minutes. Add carrots; cook and stir 2-3 minutes.
2. Add soda, salt and pepper to skillet and bring to a boil. Reduce heat, cover, and simmer 4-5 minutes, or until carrots are tender. Serve immediately.
