Mint Chocolate Chip Cookies

These Mint Chocolate Chip Cookies start with a cake mix and are so simple to whip up!

Ingredients
- 1 box white cake mix (I used Duncan Hines)
- 8 oz block of cream cheese, softened
- 1 stick salted butter, softened
- 1 large egg
- 2 teaspoons mint extract
- Few drops green food coloring
- 1 cup mini chocolate chips
Preparation
Step 1
Preheat oven to 350. Line baking sheets with parchment paper.
In the bowl of a mixer, beat butter and cream cheese until smooth. Add cake mix, egg, extract, and food coloring and beat on medium until combined. Fold in chocolate chips.
Using a large cookie scoop, scoop onto lined baking sheets, a couple of inches apart. Bake 8-10 minutes or until edges just start to turn golden.
Let cool before removing to cooling racks. Store in refrigerator or freezer for a cool treat.
