Ingredients
- 4 large skinless, boneless chicken breasts
- 3 T garlic butter, softened
- 3 T chopped fresh cilantro
- 1 T sunflower oil
- finely grated zest and juice of 2 limes, plus extra zest to garnish
- 4 T brown sugar
Preparation
Step 1
Place each chicken breast between 2 sheets of plastic wrap and pound with a rolling pin until glattened to about 1/2 inch thick
Mix together the garlic butter and cilantro and spread over each flattened chicken breast. Roll up and secure with a toothpick.
Heat the oil in a preheated wok or heavy-bottomed skillet.
Add chicken rollsand cook, turning for 15 - 20 minutes or until cooked through.
Remove the chicken from the owk and transfer to a board. Cut each chicken roll into slices.
Add the lime zest, juice and sugar to the wok and heat gently, stirring, unti lthe sugar has dissolved. Raise the heat and allow to bubble for 2 minutes.
Arrange the chicken on warmed serving plates and spoon the pan juices over to serve.
Garnish the garlic and lime chicken with etra lime zest, if desired.
