Brunch Pie

Ingredients

  • 3 tablespoons Blue Bonnet Margarine
  • 2 cans (15 oz. each) Mary Kitchen Corned Beef Hash
  • 3 eggs
  • 1/2 cup chopped onion
  • 1 cup grated cheese (cheddar or monterey jack)
  • 1 can (16 oz.) VEG-ALL Mixed vegetables, drained
  • 1/2 cup evaporated milk
  • 1 tablespoon flour
  • 1/2 teaspoon dry mustard
  • Dash garlic powder
  • Dash ground black pepper

Preparation

Step 1

Coat a 9-inch pie plate with margarine. Mix has and 1 beaten egg; press into plate to form crust. Bake at 375 degrees F. for 10 minutes. Sauté onion in 3 tablespoons margarine. Layer cheese, sautéed onion, and VEG-ALL in crust. Beat together remaining eggs, evaporated milk, flour, mustard, garlic powder and pepper. Pour over mixture in crust. Bake at 350 degrees F. for 30 to 40 minutes, until filling Is set. Let stand 10 minutes before serving.
