Thumbprint Cookies

Ingredients

  • Icing:
  • 1/2 cup brown sugar
  • 3 Egg YOLKS
  • 1 cup butter
  • 2 cups flour
  • 1/2 tsp. almond extract
  • Egg Whites: save to roll cookies in
  • 1/2 cup chopped nuts
  • Cream cheese & almond extract

Preparation

Step 1

Cream together sugar, butter, egg yolks & almond extract. Beat flour mixture. Form balls and dip into slightly beaten egg whites.
Roll in finely chopped nuts. Put on lightly greased cookie sheet and make thumbprint on top of each ball.
Bake at 350 degrees for 8 minutes, remove from oven and reset thumbprint. Bake 8-10 minutes longer.
Cool and fill with icing.
