Baked Carrot Casserole

Ingredients

  • one 1-lb. bag baby carrots
  • 1/4 C. water
  • 1/2 C. mayonnaise
  • 2 Tbs. onion, minced
  • 1 1/2 Tbs. horseradish
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 C. fine bread or cracker crumbs
  • 1 Tbs. butter, melted
  • paprika

Directions

Preheat oven to 375 degrees. Cook carrots until tender. Drain, reserving water. Place in a shallow baking dish. Combine water, mayonnaise, onion, horseradish, salt, and pepper. Pour over carrots. Combine bread crumbs and butter and spread on top of carrots. Sprinkle with paprika. Bake 15-20 minutes.
