Ingredients
- 3 lbs. new red potatoes
- 5 lg garlic cloves
- 1 T +1t lemon juice
- 4 T olive oil
- 3 T parsley
Preparation
Step 1
Peel a wide strip around the middl of each potato. Cover potatoes with
salted water. close PC and bring to high for 8-10 mins. Remkove
potatoes and Empty water.
In 1T of oil saute garlic. Add garlic, lemon juice, remaining oil and
salt and pepper to taste to blender. Puree dressing. Toss potatoes with
dressing and parsley. Serve warm or room temp.
