Ingredients

  • 1

    lb boneless, skinless chicken breast

  • ½

    c. Italian salad dressing

  • ½

    c. salsa

  • 2

    T lemon or lime juice

  • 1

    t worcestershire sauce

  • 1

    package 7" tortillas

  • 1

    T oil

  • 1

    medium onion, cut in ¼" rings

  • 1

    green, red or yellow sweet pepper, cut in strips

  • OPTIONAL: guacamole, sour cream, shredded cheese, salsa, pickled jalapenos

Directions

1. Slice chicken into bite size strips (partially freeze chicken for easier slicing). Place strips in plastic bag set in a deep bowl. 2. In another bowl, mix together salad dressing, 1/2 c. salsa, lemon or lime juice and worcestershire sauce. Pour mixture over chicken. Seal bag. Marinate in fridge, 6-24 hours, turning bag occasionally. 3. Preheat a large skillet over high heat; add onions. Cook and stir onions in hot oil for 1 1/2 minutes. Add pepper strips; cook and stir til crisp-tender. Remove veggies from skillet. 4. Add half undrained chicken strips to hot skillet. Cook and stir 2-3 minutes or til done. Remove chicken and drain well. Repeat with remaining chicken. Return all chicken and veggies to skillet and heat through. 5. Wrap tortillas in paper towel and microwave on high, 1 minute. Fill warmed tortillas with chicken mixture. Add desired toppings. Roll up tortillas.
