Ingredients

  • Glaze:
  • 1 egg, lightly beaten
  • 6 Tbsp. Milk
  • 5 Tbsp. Butter, melted
  • 4 1/2 tsp. Honey
  • 1/2 tsp. Vanilla
  • 1 cup pancake mix
  • 1/4 c. finely chopped walnuts
  • 1/4 c. finally chopped apricots
  • 2 Tbsp. Raisins (optional)
  • 1/2 c. confectioners sugar
  • 1 tsp. Honey
  • 1/8 tsp. Ground cloves
  • 2-3 tsp. Milk

Preparation

Step 1

Combine first five ingredients. Stir in pancake mix just until moistened. Fold in walnuts, apricots, and raisins. Pour into two mini loaf pans. Bake at 350 for 22-28 minutes or until a toothpick comes out clean.
Cool 5 minutes.

Combine glaze ingredients and pour over loaves.
