Cheese Soup

Ingredients

  • 3 cups potatoes cut in small pieces
  • 1/2 cup celery cut in small pieces
  • 1/2 cup carrots cut in small pieces
  • 1/4 cup onions cut in small pieces
  • 1 tsp. parsley flakes
  • 1 chicken bouillon cube
  • 1 cup water
  • 1-1/2 cups milk
  • 2 Tabl. Flour
  • 8 oz. Velveeta cheese, cubed
  • 1/4 cup cubed cooked ham

Preparation

Step 1

Combine vegetables, parsley, water, bouillon in saucepan. Cover and simmer 20-30 minutes or until veggies tender.

Gradually add milk to flour, stirring until well blended. Then add milk mixture to veggies. Cook until thickened. Add ham and velveeta. Stir until melted.

For additional flavor, pour in a bottle of Killian's Irish Red Ale and heat through.
