Coconut Meringues

  • 2 egg whites
  • salt, dash
  • 1/2 t vanilla
  • 2/3 cups powdered sugar
  • 3 1/2 oz coconut, flaked
  • Red & Green Maraschino Cherries



Step 1

Beat egg whites with salt and vanilla to form soft peaks. Gradually add sugar, beating after each addition to form stiff peaks. Fold in coconut by hand. Drop rounded teaspoon full of mixture onto greased or heavy duty foil lined baking sheet and top each with 1/2 cherry. Bake 325oF for 20 minutes.

This recipe only makes about 3 dozen so I usually double it.
