Apricot Cookies

These triangular apricot drop cookies are super easy to make and perfect at any time of the year. You'll love them with tea or coffee on the side.

Ingredients
- FILLING:
- 1/2 pound butter
- 2 cups flour
- 8 ounces cream cheese
- 1 package dried apricots, chopped

Preparation
Step 1
Cook apricots in a little water on the stovetop and thicken with cornstarch.
Combine butter and cream cheese. Mix in flour.
Roll dough and cut into squares. Add drop filling and pinch into triangle.
Bake at 350°F for 15 minutes.
