CAESAR SALAD DRESSING

Ingredients

  • ● Place the following in a medium bowl:
  • 2 med. garlic cloves, peeled and minced with 1/4 tsp. salt
  • 1 ea. anchovy fillets, drained and chopped fine (about 1 tsp.)
  • 1-1/2 cup mayonnaise
  • 3 tbsp. freshly squeezed lemon juice
  • 5 grinds black pepper
  • 2 tbsp. grated Parmesan cheese
  • ● Add and mix well with a whisk until all ingredients are incorporated.
  • Serving Suggestions:
  • ● Place the following in a medium bowl:

  • 1-1/2 cup mayonnaise
  • 3 tbsp. freshly squeezed lemon juice
  • 5 grinds black pepper
  • 2 tbsp. grated Parmesan cheese
  • ● Add and mix well with a whisk until all ingredients are incorporated.
  • Serving Suggestions:
  • ●Dress salad just before you are ready to serve.
  • ●Place romaine lettuce in a large mixing bowl. Add dressing in small amounts as you toss it into the lettuce.
  • ●Continue adding enough dressing to just coat the lettuce to your liking. (You do not need to use all of the dressing.)
  • ●For a more formal presentation, line a serving bowl with romaine lettuce leaves and transfer the mixed salad into the serving bowl.
  • ●Garnish the dressed salad with home-baked croutons, fresh ground black pepper and shredded or shaved Parmesan cheese.

Note: To make Parmesan shavings, use a vegetable peeler and peel curls from a wedge of Parmesan cheese.
