Ingredients
- 1 medium head cauliflower (2 lb), trimmed into florets
- 2 oz. cream cheese, softened
- 1/2 cup crumbled feta cheese
- 2 Tbsp olive oil
- 1 Tbsp lemon juice
- 1/4 tsp salt
- fresh oregano
Preparation
Step 1
1. Cook cauliflower in a pot of lightly salted boiling water, covered, for 15 minutes. Drain; cool. Transfer to a food processor.
2. Add cream cheese, feta cheese, oil, lemon juice, and salt. Process until smooth.
3. Transfer to a bowl. Cover and chill for up to 3 days. To serve, sprinkle with snipped fresh oregano.
