Balsamic & Roasted Garlic Vinaigrette

Ingredients

  • 6 garlic cloves
  • 1/2 cup balsamic vinegar
  • 1 1/2 teaspoons Dijon mustard
  • 3/4 cup olive oil
  • salt and pepper

Preparation

Step 1

1Roast garlic at 350 degrees until soft, golden brown and fragrant - about 30 minutes.

2Peel cloves and mash coarsely in a mixing bowl.

3Add the vinegar and mustard, whisking to incorporate.

4Whisk in the olive oil.

5Season with salt and pepper.

6Refrigerate at least 1 hour.
