Italian Chicken Roll-ups

Ingredients

  • This recipe uses homemade spaghetti sauce. If pressed for time, you can use your favorite store bought.
  • 1 (10-ounce) package frozen chopped broccoli
  • 1/2 onion, chopped
  • 4 boneless, skinless chicken breasts, pounded flat
  • salt and pepper
  • 4 slices Mozzarella cheese
  • 1 (8-ounce) can tomato sauce
  • % teaspoon dried oregano
  • % teaspoon dried basil
  • % teaspoon garlic powder
  • 2 tablespoons Parmesan cheese

Preparation

Step 1

Cook broccoli and onion in 1/2 cup water for 7 minutes. Drain and divide in 4 portions. Season chicken breasts with salt and pepper. Lay a slice of cheese on each breast and top with broccoli. Roll up, secure with toothpick, and place rolls in baking dish. Combine tomato sauce and next 3 ingredients; pour over rolls. Sprinkle with cheese and bake at 350 for 45 minutes.
