Spinach Pesto Grilled Cheese Sandwich

• 3 tablespoons spinach (aka spanakopita) pesto
• 1/4 cup graviera or gruyere (grated)
• 2 slices bread
• 1 tablespoon butter

1. Assemble sandwich and grill until the cheese has melted and the bread is golden brown on both sides, about 2-4 minutes per side.
