Ingredients

  • 3 cans DelMonte Fiesta Corn or 6 cans Green Giant Mexicorn
  • 3 green onions - sliced
  • 1 small can sliced black olives - coarsely chopped
  • 4 - 6 Tbsp chopped jalapenos
  • Sharp cheddar cheese - finely grated
  • Hellman's mayonnaise
  • fresh ground black pepper
  • 1-1/2 cups crushed Fritos

Preparation

Step 1

Thoroughly drain corn and olives
Mixx all ingredients, except Fritos, together with enough mayonnaise to hold mixture together - start with about 2 Tbsp
Cover - Chill for 2-4 hours
Just before serving, add crushed Fritos and toss.
