hens in a nest

Ingredients

  • 1 cup rice
  • 2 cups water
  • 1/4 tsp salt
  • 1 small onion
  • 4 stalks celery
  • 1 tsp dried parsley
  • 1 carrot
  • 2-4 tbs butter
  • 2 cornish game hens
  • 1 can or jar of gravy, your choice

Preparation

Step 1

Place the salt and rice in the water and bring to boil. Boil open for 10 minutes. Remove from the heat and cover so rice can steam. while rice is cooking, chop the onion, celery, and carrot. Add the parsley to the mixture. saute in the butter until softened. Add vegetables to the rice.

Wash and dry the hens. stuff full with rice mixture. Place hens in a small, greased roaster. Bake at 350 oven for approximately 1 1/2 hours.

NOTE: This can all be done the previous day. Just place cooked hens in refrigerator overnight.

When cooking is done(or the nest day), slice hens through the breast bone making two portions. Take one half and place on double sheet or foil. crush the sides around the hen to look like a "nest". Do the same for all additional hens. Spoon 2 tbs of gravy over the exposed rice. Cover top with foil and return to 350 oven to complete cooking.)10 minutes if hens are still hot,1 hour if chilled from previous day)
