  • lbs ripe plum tomatoes 8-10

  • 2

    tbsp finely chopped onion

  • 2

    large cloves garlic minced

  • ¼

    cup chopped basil

  • 2

    tsp red wine vinegar

  • 6

    tbsp extra virgin olive oil

  • Salt and Pepper

  • Italian Crusty Bread sliced on angle about ¾ inch thick


Cut tomatoes in half and squeeze out seeds and juice. Chop tomatoes into small dice. Place in bowl with all ingredients and half the olive oil. Salt and pepper to taste. Let stand at room temperature for 1 hour. Drain liquid. Grill toasts on both sides and brush with olive oil. OR butter first and toast until golden. Spoon on tomato mixture and serve immediately. Options: Sprinkle with feta or parmesan curls if desired. Put back in oven once topped with parmesan ...melt and then drizzle balsamic glaze over entire sheet. Put on slick slice of baguette toasted like at the Quaaout Lodge. Use Balsamic Fig Glaze as another option.
