  • 2 cups sugar
  • 2 cups light corn syrup
  • 6 ounces unsweetened chocolate
  • 1/4 teaspoon salt
  • 1 cup butter
  • 2 cups cream

Preparation

Step 1

1. Stir over moderate heat the first five ingredients and one cup of the cream. Bring to 240 degrees. Stir constantly.

2. Remove from heat and add the other cup of cream, Return to heat and cook to between 244 and 246 degrees

3. Pour at once, without stiring into a 9x12 pan lined with non-stick foil.

4. When firm, in about three hours, invert onto board and cut into squares.
