Ingredients

  • 3 slices of bacon
  • 1/3 cup minced white onion
  • 4 tbps of chopped spring onions
  • 1 1/2 cup of grated boiled and peeled potatoes
  • 1/2 cup grated gruyere
  • 2 cloves of garlic grated
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • 2 tablespoons of butter
  • 2 tablespoons of chopped green spring onions
  • 2 tablespoons of chopped flat leaf parsley

Preparation

Step 1

1 Cook the bacon in a skillet until brown. Add the white onions and spring onions. Cook for 5 minutes.
2 Mix and mash the potatoes, cheese, garlic and salt and pepper together.
3 In a skillet heat up a little butter with the olive oil. Form a patty with the potato mix, about 1.5 inches thick. Cook until brown on both sides (5 minutes per side) on low heat.
4 Top with parsley, spring onions and salt and pepper if needed.
