Sauteed Chayote with Sweet Onion & Bacon

Ingredients
- 3 slices bacon cut into 1/2" pieces
- 1 1/2 lb chayote, @ 2 large, peeled, quartered, seeded and sliced crosswise 1/4" thick
- 1 med sweet onion, thinly sliced into half moons
- 3 minced garlic cloves
- 2 T dry white wine
- 1/2 t chopped rosemary
- 1/2 t chopped thyme
- 2 t lemon juice
- Kosher salt & pepper

Preparation
Step 1
In skillet, cook bacon over med heat until crisp, @ 5 min. With slotted spoon, transfer to paper-towel lined plate.
Add chayote, onion & garlic to bacon fat & toss to coat. Cook, covered, stirring occasionally, until chayote & onion begin to brown slightly, @ 10 min.
Add wine, rosemary & thyme; continue to cook, covered, stirring occasionally, until chayote is tender, @ 8 min.
Remove from heat, stir in bacon, & season with lemon juice, salt & pepper. Serve
