Corn and Black Bean Salad

Ingredients

  • 3 - 15ounce cans black beans, drained and rinsed
  • 1 - 14.5 ounce can whole corn, drained
  • 2 - 14.5 cans petite diced tomatoes with green chilies drained (I used one big can)
  • 1/2 cup chopped green onion
  • 2 tablespoons chopped cilantro

Preparation

Step 1

In large bowl combine all ingredients, stir to combine. Refrigerate for several hours or overnight
to blend flavors. Serve with chips or crackers.
