Spicy Pickled Kirby Cucumbers
These pickles have a slow heat. If you like some heat, you'll love them. They always go fast, even just as a snack!

Ingredients
- 4 Kirby cucumbers or 2 regular cucumbers, sliced thin
- 2 fresh red Thai chilies, seeded and sliced thin (leave seeds in for extra spicy) or crushed red pepper flakes
- 1/2 cup rice wine vinegar
- 1/2 teaspoon kosher salt
- 1 teaspoon sugar or sugar substitute
Preparation
Step 1
Combine all the ingredients in a bowl and mix well. Let sit for at least 1 hour for the flavors to blend. Taste for seasoning and adjust to taste. Will keep in the refrigerator for 2 -3 weeks.
For a 1 quart mason jar make 1 1/2 batch (4 large Kirby cucumbers or 5-6 small Kirby cucumbers).
