Chicken Parmigiana

Ingredients

  • 3 whole chicken breasts
  • 2 eggs, lightly beaten
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1 tb butter
  • 2 cups tomato sauce
  • 8 oz mozzarella cheese (long thin slices)
  • 1/4 - 1/2 tsp basil
  • 1/4 - 1/2 tsp oregano
  • 2 cloves garlic, crushed
  • 3/4 cup fine cornflake crumbs
  • 1/2 cup peanut oil
  • 1/2 cup parmesan, grated

Preparation

Step 1

1) Bone and skin chicken breasts. Pound chicken breasts until thin. Dip chicken into mixture of eggs, salt and pepper, then into cornflake crumbs. Brown chicken in the hot oil quickly. Put in shallow baking dish. Drain excess oil from pan. Stir tomato sauce, garlic, basil, oregano, into frying pan. Heat to boiling - simmer 10 minutes or until thickened. Stir in butter. Pour over chicken. Sprinkle with parmesan cheese - cover and bake at 350 degrees for 30 minutes. Uncover. Place mozzarella slices evenly on top. Bake 10 minutes or until cheese metls. Serve over noodles - linguine preferably.
