Ingredients

  • For Brownie Crust:
  • 12 oz. semi sweet choclate bits
  • 3/4 C. butter
  • 2/3 C. sugar
  • 1/2 C. flour
  • 1/2 tsp. salt
  • 4 eggs
  • 1 Tbs. vanilla
  • For cheescake layer:
  • 2 8 oz. pkgs. cream cheese, softened
  • 3 ripe bananas
  • 1/2 C. sugar
  • 2 Tbs. flour
  • Pinch of salt
  • 3 eggs
  • For topping layer:
  • 1 qt. strawberries, hulled and sliced
  • 1/4 C. pineapple jam
  • 1 Tbs. water

Step 1

Heat oven to 350. Coat a 9x13 pan with spray. In microwave safe bowl, heat choclate bits and butter on high for 1-2 mins. stirring every 20 secs. until melted. Set aside. In a medium bowl, whisk together sugar, salt, and flour. Add eggs and vanilla and beat until smooth. Stir in chocolate mixture. Pour into prepared pan and bake 20 mins. Remove pan form oven and push flat any bubbles that may have formed in the crust. COmbine cream cheese, bananas, flour, sugar, and salt and mix utnilcompeletley smooth. Add the eggs, one at a time and beat until smooth. Pour over brownie layer. and bake for 20-25 mins or until center is set. Cool, then refrigerate until completely chilled. Arrange strawberries on top of cheesecake. In a small microwave safe bowl mix pineapple jam and water and heat in microwave until bubbling. Spoon jam over strawberries and chill for about 15 mins, allowing the jam to set. Store in fridge.
