Oatmeal Pancakes with Roasted Apples

  • 1/2 cup All Purpose Flour
  • 1/2 Cup Quick Cooking Oats
  • 1 Tablespoon White Sugar
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 3/4 Cup Buttermilk
  • 1 Teaspoon Vanilla
  • 2 Tablespoons Vegetable Oil
  • 1 Egg
  • Roasted Apples
  • 1/4 Teaspoon ground cinnamon
  • 1/4 Teaspoon ground nutmeg
  • 2 Tablespoons maple syrup
  • 3 large Jonagold or Gala apples, peeled, cored & cut into 1/2 inch thick slices

Preparation

Step 1

1. Place flour, oats, sugar, baking powder, baking soda, salt, buttermilk, vanilla, oil & egg in a food processor and purée until smooth.

2. Heat a lightly oil griddle to frying pan over medium High heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Roasted Apples:
Preheat oven to 375 F. In a large bowl, toss the apples with cinnamon, nutmeg and maple syrup. Place apples in a 9 inch glass baking dish, roast until cartelized & soft, stirring a few times, bake about 30 minutes.
