Ingredients

  • 1 tbsp (15ml) Oil
  • 12 chicken thighs
  • 11/2 lbs Baby red potatoes
  • 2 cups white mushrooms
  • 1 onion (chopped)
  • 3 tbsp lemon juice
  • 3 tbsp oil
  • 3 tbsp water
  • 1 tbsp lemon juice
  • 21/2 tbsp dried oregano
  • 1/2 tbsp salt
  • 1/4 tbsp pepper
  • 2 cups baby carrots

Preparation

Step 1

-Heat first amount of oil in a frying pan and cook chicken until brown then transfer to casserole dish. Preheat oven at 400F
-add next 3 ingredients.
- Combine next 8 ingredients into a cup and drizzle over chicken and veggies, toss to coat, bake uncovered for 20mins.
- Add carrots then bake covered for 25-30 mins or until chicken is cooked and carrots are tender.
