  • 1 1/2 cups light brown sugar
  • 1 cup butter
  • 1 1/2 cups mixed cocktail nuts, such as peanuts, almonds and cashews
  • 1 tsp vanilla extract
  • 1 pkg (12 oz) semisweet chocolate chips

Preparation

Step 1

Coat 13 x 9" baking pan with cooking spray. Line bottom with parchment paper; coat with spray.

In pot, combine sugar and butter. Over medium heat, stirring constantly, bring to boil; cook, stirring constantly, until mixture reaches 280 degrees on candy thermometer, 5 - 7 minutes. Stir in nuts; cook and stir 2 - 3 minutes.

Remove pot from heat; stir in vanilla. Pour into baking pan. Sprinkle chocolate over top. As chocolate begins to melt, gently spread with knife.

Refrigerate until chocolate is set and candy is hard, 20 - 30 minutes. Invert pan onto cutting board to release brickle. Cut into squares or break into pieces.

Store in airtight container in refrigerator.
