Debra's Chicken Cordon Blue

Ingredients

  • 1 cup buttermilk
  • 1 teaspoon salt
  • 2 4 ounce boneless skinless chicken breasts, butterflied
  • 1 cup Italian bread crumbs
  • 2 slices cheese (cheddar preferably)
  • 4 ounces lean ham, shaved thin

Preparation

Step 1

Place the buttermilk and salt into a zip lock bag, add the chicken breasts and let marinate refrigerated for at least 1 hour.

Turn on Rotating Waffle Baker. Spray with nonstick spray.
Place bread crumbs onto a plate.
Place the chicken breasts folded open on to bread crumbs.

Insert 1 slice of cheese and half the ham to the center of each butterflied chicken breast.

Fold the chicken breasts in half to enclose the meat and cheese, and make sure the bread crumbs cover the outside well.

Place the chicken breast in the preheated Rotating Waffle Baker.
Turn the handle and set a kitchen timer for 10 minutes.
Deb’s Tip

Try substituting Mozzarella cheese for the cheddar and pepperoni for the ham, or try using Fontina cheese and Prosciutto ham, and add a sage leave or two for added flavor.
