SHRIMP CURRY

Ingredients

  • 1 medium-size yellow onion
  • 5 tbsp butter
  • 5 tbsp flour
  • 2 1/2 cups chicken broth
  • 1 1/4 tsp curry powder
  • 1/2 tsp salt
  • 2 tsp fresh lemon juice
  • 2 lb cooked shrimp
  • 4 green onions

Preparation

Step 1

Peel and finely chop yellow onion. Melt butter over medium heat in a medium-sized skillet and add onion. Cook until tender, about 4 or 5 minutes. Add flour and stir constantly for about 2-3 minutes.

Stirring, slowly add chicken broth, curry powder and salt. Cook over medium-low heat until sauce thickens to consistency of melted ice cream. Stir constantly. Add lemon juice and shrimp. Heat for about 3-5 minutes.

Serve with white steamed rice. Sprinkle chopped green onions on top.
