Hot German Potato Salad

Ingredients

  • 5 pounds red skinned potatoes, boiled to firm, cooled and peeled
  • 1 pound bacon
  • 2 medium-large onions, diced
  • 2 pints chicken stock
  • 4 tablespoons white vinegar
  • 1 bunch parsley, chopped fine
  • 2 bunches chives, chopped fine
  • 2 ounces cornstarch mixed in 4 tablespoons cold water
  • Salt, white pepper

Preparation

Step 1

1. Slice peeled potatoes and place in a bowl

2. Saute bacon. When bacon is semi-done, add diced onions and saute until onions are tender. Add stock, mix well and bring to a boil. Add vinegar, boil for 5 secons.

3. Add cornstarch that has been mixed with water, stir well. Add parsley and chives. Taste and correct seasonings with salt and pepper. Add mixture to sliced potatoes in the bowl, stir well and serve
