Maple Oatmeal Raisin Cookies

By

The addition of that maple glaze has RUINED me forever. Its just so rich, so complimentary to that subtle sweet spicy cookie, its like a match made in cookie heaven.

I will never be able to eat a plain oatmeal cookie again

Ingredients

  • 3 cups rolled oats (I used organic)
  • 1 1/2 cups AP flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp kosher salt
  • 1 1/4 cup brown sugar
  • 1 stick unsalted butter
  • 2 extra large eggs
  • 1 tsp vanilla
  • 1 cup raisins
  • 1/4 cup ripe mashed banana
  • 2 tbsp butter
  • 1/4 cup PURE maple syrup (I used organic)
  • 1 cup powder sugar

Preparation

Step 1

1.In mixer on low speed, cream together vanilla, eggs, banana, sugar and 1 stick room temp. butter. Turn off mixer and add flour, baking soda, cinnamon, salt, raisins and oats. Turn mixer to low for 30 seconds, then medium for about a minute. Do not overmix.
2.Place batter in freezer for 15 minutes or fridge for one hour. Using 1/4 measuring cup (or ice cream scoop), scoop batter onto parchment lined cookie sheet and bake for 8-12 minutes on 350.
3.For GLAZE
4.Melt 2 tbsp butter and PURE maple syrup over medium low heat until fully incorporated. Remove from heat and add 1 cup powder sugar. Pour 1-2 tbsp of glaze over each cookie.
