Ingredients
- Beef:
- 2 tablespoons vegetable oil
- 4 garlic cloves minced
- 1 teaspoon sugar
- 2 lb. tenderloin cut into 1” cubes
- Vinaigrette:
- 2 tablespoons rice vinegar
- 2 tablespoons dry sherry
- 1 tablespoon soy sauce
- 1-1/2 teaspoons Thai fish sauce
- 1 tablespoon sugar
- 2 tablespoons vegetable oil
- 2 onion halved thinly sliced
- 4 green onions cut into 1” pieces
- 2 tablespoons butter
- 1/4 cup fresh lime juice

Step 1
Beef:
Mix oil, garlic and sugar in 13x9x2” dish. Add beef, sprinkle with salt and pepper. Chill 2-6 hours.
Vinaigrette:
Whisk first 3 ingredients in small bowl to blend. Heat oil in skillet over high heat. Working in batches, add beef and stir fry just until well browned but still rate about 2 minutes. Transfer beef to bowl. Add all onions, stir until crisp-tender about 1 minute. Return beef to skillet. Add vinaigrette, butter, stir just until beef is medium-rare, about 1 minute. Place lime juice in bowl. Season with salt and pepper. Drizzle over beef.
