Ingredients
- 1 . 1 1/4 cups sugar
- 2 . 1/2 cup vegetable oil
- 3 . 2 large eggs
- 4 . 2 cups all-purpose flour
- 5 . 2 Tsp baking soda
- 6 . 1/2 Tsp salt
- 7 . 1 (15.25-oz) can fruit cocktail, undrained
- 8 . 1/2 cup sweetened flaked coconut
- 9 . Coconut Frosting (recipe follows)
- 10 . 1 (2.25-oz) bag chopped walnuts
Preparation
Step 1
1. Preheat oven to 350*. Lightly grease a 13 X 9-inch baking dish.
2. In a large bowl, beat sugar, oil, and eggs at medium speed with an electric mixer until fluffy.
3. In a medium bowl,. combine flour, baking soda, and salt.
4. Gradually add to sugar mixture, beating well (batter will be thick).
5. Stir in fruit cocktail. Poiur into prepared baking dish.
6. Sprinkle evenly with coconut.
7. Bake for 40 to 45 minutes or until a wooden pick inserted in center comes out clean.
8. Pour Coconut Frosting over hot cake.
9. Sprinkle with walnuts. Cool completely. Cut into squares to serve.
COCONUT FROSTING
1. 3/4 cup sugar
2. 1/2 cup butter
3. 1/2 cup evaporated milk
4. 1/2 cup sweetened flaked coconut
5. 1 Tsp vanilla extract
