Ingredients

    cups half/half

  • 2

    eggs

  • ¾

    cups sugar

  • ½

    cup flour

  • ¼

    tsp. salt

  • 1

    cup coconut

  • 1

    tsp. vanilla

  • pre-baked pie shell

  • 1

    cup (or more) cool whip

  • toasted coconut

Directions

Combine half/half, eggs, sugar, flour and salt Bring to a boil over low heat, stirring constantly. Remove from heat and stir in coconut and vanilla. Pour into prepared pie shell and chill 2-4 hours or overnight. Top with coconut and toasted coconut.
