Corn Tortilla Crepes

Ingredients

• single doubled tripled
• cornstarch 3/4c 1 1/2c 2 1/4
• Milk 1 C 2c 3c
• eggs 2 4 6
• Salt 1/2t 1t 1 1/2
• Cornmeal 1/3 c 2/3c 1c
• Melt Butter 2T 4T 6 T

Preparation

Step 1

Mix starch and milk until smooth. Beat in eggs and salt. Add meal and stir in butter. Cook in scant amounts on nonstick skillets that have been oiled.
