Yukon Gold Mashed Potato Casserole

Ingredients

  • 4 lbs Yukon gold potatoes, peeled and quartered
  • 1 cup warm milk
  • 1/4 cup butter, melted, plus some for the casserole
  • salt and white pepper to taste
  • 1 cup grated old cheddar cheese (divided into half)
  • 3 green onions, thinly sliced (divided into thirds)

Preparation

Step 1

Place the potatoes in a pot, cover with at least 2 inches of lightly salted cold water and gently boil until very tender. Drain the potatoes well.

Thoroughly mash potatoes and then whip in the milk and butter. Season with salt and pepper; mix in 1/2 of the cheese and 2/3 of the green onions. Lightly butter the bottom and sides of a shallow 8 cup capacity casserole dish. Spoon and spread the potatoes into the casserole.

Sprinkle with remaining cheese. Bake the potatoes, uncovered, in a 375F oven for 25 to 30 minutes, or until heated through and golden on top. Sprinkle with remaining green onions and serve. Makes 8 servings.
