Ingredients
- 2 large tomatoes, ripe
- 1 large sweet green pepper (You can sub with red bell if you like)
- 1 clove garlic
- 1/2 cup or more fresh mixed herbs; chives, parsley, basil, chervil, tarragon (your choice)
- 1/2 cup extra virgin olive oil, best quality
- 3 Tbsp lemon or lime juice
- 3 cups chilled consomme or light beef stock
- 1 sweet spanish onion, peeled and thinly sliced
- 1 cup cucumber, peeled, seeded, diced or grated (don't peel if using english cucumber)
- 1 1/2 tsp salt
- 1/2 tsp paprika
- 1/4 cup chilled ice water OR 2 ice cubes
- 1 Tbsp chopped parsley
Preparation
Step 1
Place each item into a large bowl.
1. Peel, seed and chop the tomatoes. Chop bell pepper and remove seeds and membrane. Peel the garlic and chop. Chop the herbs. Add everything to bowl.
2. In another bowl (one that pours, preferably), mix the olive oil, lemon or lime juice and consommé/beef stock. Stir them into the large bowl of veggies, Gradually!
3. Add the onion and the cucumber. Then add the salt, you can add more if needed, and the paprika.
4. Place mix in a food processor and process until smooth. *You can either; Add the chilled water, to desired consistency. OR if you are serving for a dinner party, place 2 ice cubes in each bowl, then add gazpacho. TOP with chopped parsley.
