PENNSYLVANIA (SWEET) POTATOE PECAN PIE

Ingredients
- Directions:
- 1/4 c. butter
- 1 c. firmly packed brown sugar
- 1/4 t. salt
- 3 eggs
- 3/4 c. dark corn syrup
- 1 1/4 c. mashed, cooked sweet potatoes
- 1 t. vanilla
- 1 1/2 c. pecans, divided
- 9 inch pie crust, unbaked
- 1 . Cream butter and sugar. Beat in salt, eggs, corn syrup, sweet potatoes and vanilla.
- 2 . Add 1 c. nuts and pour into pastry lined pie pan. Sprinkle remaining nuts over top.
- 3 . Preheat oven to 375 F. Bake for 50-55 minutes and cool.
