Star Cookie

One of our favorite Christmas cookies. A cut-out cookie made with Oat Flour & almonds. An egg-white wash before baking makes them shine!
Ingredients
- 1 1/2 cup oat flour
- 1 1/4 cup all-purpose flour
- 1 cup whole-wheat flour
- 2 1/2 tablespoon baking powder
- 1/3 teaspoon salt
- 1 1/4 teaspoon cinnamon
- 1/3 teaspooon alspice
- 1 cup butter
- 2 cups sugar
- 1 1/4 teaspoon vanilla
- 4 1/2 (liquid) eggs
- 1 1/8 cup finely ground blanched almonds
- NOTE: to make oat flour, grind 1 3/4 cup quick or regular oats in a food-processor with a metal blade until they are as fine as flour, about 1 min.
Preparation
Step 1
On waxed paper stir together oat flour, all-purpose flour, whole wheat flour, baking powder, salt, cinnamon and allspice. In a large bowl cream butter, sugar and vanilla, beat in 3 3/4 eggs, (reserve rest of eggs until later.) Stir in flour mixture and almonds. Chill until firm enough to roll thin. On a pastry cloth with a stockinet-covered rolling pin, roll 1/4 of the dough to 1/16" thickness. (Keep remaining dough chilled). Cut with a 2" star-shaped cookie cutter, place slightly apart on a greased cookie sheet. Repeat with remaining dough. Beat reserve egg white until frothy, brush over tops of cookies. Bake in a preheated 375F oven until brownied, about 8 min. With a wide metal spatula remove to wire racks; cool completely. Store in a tightly covered container.
