Ingredients
- 2 pounds boneless firm white fish fillets
- 1/8 tsp pepper
- 1/2 cup milk
- 1/2 cup flour
- 3/4 cup dry bread crumbs
- 1/4 cup peanut oil
- 1/2 cup butter
- 1/2 cup slivered blanched almonds
- 2 T lemon juice

Preparation
Step 1
1. Season fillets with pepper. Dip them in milk, flour, mil and then bread crumbs
2. In skillet, heat oil just until it begins to smoke. Brown fish on both sides in oil, then reduce heat and cook for 10 minutes for each inch of thickness
3. Drain fish and arrange on a warm platter; discard oil
4. Melt butter in skillet. Add alonds and saute until golden. Stir in lemon juice and heat through. Spoon over fish
