Ingredients

  • 1 small onion diced
  • 2 garlic cloves minced
  • 1 T olive oil
  • 2 T tomato paste
  • pinch of sugar
  • pinch of crushed red pepper
  • 14.5 petite diced tomatoes
  • 1/4 c sundried tomatoes in oil
  • 1/4 c torn basil leaves
  • salt and pepper
  • 2 (4oz) soft goat cheese logs
  • 8 oz cream cheese softened

Preparation

Step 1

saute onions garlic in oil. Add tomato paste,sugar, crushed red pepper. cook 1 minute. Stir in canned tomatoes and sundried tomatoes.simmer 10 minutes. Stir in basil salt and pepper. Remove from heat. Preheat oven 350.
stir together cream cheese and goat cheese. spread into lightly greased 9" shallow dish. Top with tomato mixture and bake 15-18 minutes. Can be frozen before baking. thaw out in fridge,let come to room temp then cook 30 minutes
