Ingredients
- 2 carrots
- 2 stalks celery
- 2 onions
- 8 Tbls unsalted butter
- 1/2 cup flour
- 6 cups chicken broth
- juice of 1/2 lemon
- 1 tsp salt
- 1/4 tsp pepper
Preparation
Step 1
1) Chop carrots, celery and onions and then finely pulse in a food processor.
2) Melt butter in a large pan over medium-high heat, add vegetables and cook for 7 minutes.
3) Add flour and cook, stirring, for 4 minutes.
4) Lower heat to medium and whisk in ckicken broth, lemon juice, salt and pepper.
5) Simmer for 13 minutes.
6) Strain as needed and serve.
