Ingredients
- 4 T vegetable oil
- 1 clove garlic, minced
- 2 tsp minced giner
- 6 oz mushrooms
- 1 cup snow peas, sliced into stips
- 15 oz can baby corn, drained
- 2 eggs, beaten
- 8 oz small cookee shrmp, peeled and deveined
- 3 cups cooked white rice, chilled
- 1/3 cup soy sauce
- 1 bunch green onions, thinly sliced

Preparation
Step 1
1. In a wok or large deep skillet over medium high, heat 1 T goil. Add garlic and ginger and sauta for 1 minute
2. Add mushrooms and cook for 4 - 5 minutes or until tender. Add smow peas and baby corn, saute 1 minutes
3. Push ingredients to sides of pan, add eggs and stir to break up while cooking
4. Add shrimp and remaining 3 T oil. Cook until heated through, about 1 minute
5. Add rice and cook until slightly browned and crispy, about 5 minutes. Stir in soy sauce and green onions
