Simple Beet Salad

  • 2 lb assorted beets
  • 1/3 c balsamic vinagrette
  • salt and pepper
  • 1/2 c chopped toasted walnuts
  • 8 oz goat cheese



Step 1

preheat oven 400. Peel and slice beets divide into 2 aluminum foil packets drizzle with dressing and salt and pepper. Bake 45 minutes. Let cool 1 hour.
Arrange beets in a bowl and drizzle with leftover dressing top with goat cheese and walnuts.
