Mushroom Artichoke and Green Onion Crostini

Ingredients

  • 3/4 cup chopped Specialty mix mushrooms
  • 2 tsp Olive oil
  • 1/3 cup chopped marinated artichoke hearts
  • 1 large sliced green onion
  • 1 clove minced garlic
  • 4 thin slices of whole grain bread
  • 8 tsp part skim Ricotta cheese
  • Salt and pepper to taste
  • Parmesan Cheese to sprinkle

Preparation

Step 1

1. Add 2 tsp of olive oil in saute pan. Brown mushrooms over medium high heat. Stir in artichoke, green onions and garlic; cook until hot, then season to taste with salt and pepper.

2. Lightly toast bread then quickly spread 2 tsp of Ricotta Cheese. Spoon vegetable mix onto toasts and sprinkle liberally with Parmesan cheese
