Chicken Sauteed With Apples

Ingredients
- 4 boneless, skinless chicken breast halves
- 1 T olive oil
- 1 firm apple such as Braeburn, cored, halved adn cut in
- 1/2 " slices
- 1 C apple juice
- 1 lg onion, thinly sliced
- 1 garlic clove, minced
- 1/2 tsp thyme leaves
- 1/2 tsp salt
- 2 T Dijon mustard

Step 1
Place each chicken breast between 2 sheets of waxed paper and pound until 3/4" thick. Heat oil in a large skillet over medium-high heat and saute the chicken until golden, about 3 min each side.
Add apple slices, juice, onion, garlic, salt and thyme. Cover and simmer 6-8 min or until chicken is fork tender.
Remove the chicken, apple slices and onion to a serving platter and keep warm.
Bring the sauce to a boil for about 5 min or until slightly reduced. Whisk in the mustard. Pour the sauce over the chicken and serve.
